For those who are looking for a delicious eel bowl!
Unadon (eel bowl) is a combination of (1) eel, (2) sauce and (3) rice.
It's not easy to make, but there's nothing you can't do at home.
I'm going to teach you how to make an authentic unagi sauce that you can make at home!


⑴ Combine mirin and sake and bring to a boil over high heat (bringing the mixture to a boil will remove the alcohol).  ※Be careful not to catch the alcohol on fire. ※Grill the heads and bones well and put them in here.
⑵  Dissolve the sugar in (1).
⑶ Mix the thick soy sauce in (2) and bring to a boil again.
⑷ Boil down over very low heat for 15 to 20 minutes (the longer it takes, the thicker it will be).
⑸ Remove the blemishes, filter and cool as quickly as possible (if you feel it needs to be a little sweeter, add sugar later to adjust the sweetness).

★Mix equal amounts of soy sauce and mirin★
This is still a great sauce. In fact, it's basic!
If it's not sweet enough, add sake and sugar a little at a time while heating it up, stopping at just the right point, and you've got your own secret sauce.
